                           Cinnamon Coffee Cake

   1 1/2  Cups          Flour
   2 1/2  Teaspoons     Baking Powder
     1/2  Cup           Sugar
   1                    Egg White
     1/4  Cup           Oil
     3/4  Cup           Buttermilk (or Milk)
   1      Teaspoon      Almond Flavouring (OPTIONAL)
     1/2  Cup           Brown Sugar -- Topping
     1/2  Cup           Almonds,Slivered (or Pecans,chopped) -- "
   2      Tablespoons   Flour -- "
   2      Tablespoons   Oil -- "
   2      Teaspoons     Cinnamon -- "

1)  Mix together the flour, baking powder and sugar.

2)  Blend in the egg white, oil and milk and stir until the flour is moistened.

3)  In a separate bowl, mix brown sugar, cinnamon and flour.  Then stir in the nuts and mix well.  Then add the oil and blend well.

4)  Oil an 8-inch square pan.  Spread 1/2 of the batter evenly on the bottom, sprinkle with 1/2 of the topping, spoon the remaining batter over the topping carefully and top with the remaining topping.

5)  Bake at 190° C (375° F) for 30 minutes, or until done.
 

NOTE:  This is a great coffee cake and really fast and easy to make.  The original recipe called for pecans instead of almonds, but we can't get pecans in Europe.  I also added the almond flavouring touch to the original recipe.
