                            Chinese Fried Rice

   1      Cup           Long-Grain Rice
   1      Tablespoon    Sesame Oil
   1      Pound         Chicken (or Shrimp or Pork)
   1      Stalk         Celery (large stalk) -- chopped fine
   1      Small         Carrot -- chopped fine
     1/2  Medium        Onion -- chopped fine
   1      Tablespoon    Soy Sauce
                        White Pepper -- to taste
     1/2                Green Pepper -- chopped fine
   3                    Eggs -- scrambled
                        Green Onion Tops -- chopped

1)  Saute meat of choice in a wok at high heat in sesame oil for two minutes if fresh (30 seconds if left over).

2)  Add carrots and saute for two minutes, stirring constantly.

3)  Add onions, celery and soy sauce, sprinkle with white pepper and mix well.

4)  Add green pepper and saute for two minutes.

5)  Add cooked rice and mix well.

6)  Add enough additional soy sauce to make the rice brownish.

7)  Heap on a heated platter and garnish with eggs and green onions.
