                           Chicken Cheese Soup

   1      Small         Onion
   1      Stalk         Celery (about 1/2 cup)
   2      Tablespoons   Butter
   2      Tablespoons   Flour
     1/4  Teaspoon      Pepper
     1/4  Teaspoon      Dry Mustard
   1      Cup           Milk
 500      Milliliters   Broth -- (18 ounces)
   2      Cups          Shredded Cheddar Cheese
 150      Grams         Sour Cream -- (5 1/2 ounces)
 200      Grams         Cooked Chicken, Chopped -- (7 ounces)

1)  Cover and cook onion and celery in the butter in a 2-quart saucepan until onion is tender (about 5 minutes).

2)  Stir in flour, pepper and mustard.

3)  Add milk, broth and bits of cooked chicken and heat to boiling over medium heat, stirring constantly.  Boil and stir for 1 minute.

4)  Turn the heat to low and stir in the sour cream and the cheese.  Heat it just until the cheese is melted.

5)  Sprinkle with paprika if desired.
