                           Cheesy Chile Squares

   4      Tablespoons   Butter
   5                    Eggs
     1/4  Cup           Flour
     1/2  Teaspoon      Baking Powder
     1/8  Teaspoon      Salt
   1      Dash          Cayenne
   2      Cups          Cheddar Cheese, Shredded
   1      Cup           Cottage Cheese, Small Curd
 112      Grams         Green Chiles, Diced -- (4 ounces)

1)  Preheat oven to 200° C (400° F).  Melt butter in a 9-inch square baking pan in the oven.

2)  In a large bowl, whisk eggs until well blended.  Stir in flour, baking powder, salt and cayenne.  Tip baking pan to coat bottom and sides; add melted butter to egg mixture.  Add Cheddar, cottage cheese and chiles and blend well.

3)  Pour mixture into buttered pan and bake 15 minutes.  Reduce oven temperature to 180° (350° F) and bake 30 to 35 minutes longer, until top is lightly browned and a knife inserted into center shows no evidence of uncooked egg.  Let cool on a rack at least 10 minutes.  Cut into 1 1/2-inch squares.  (If made in advance, cover and refrigerate up to 2 days.  Freeze for longer storage.)  Serve warm or at room temperature.
