                              Cheese Souffle

   4      Ounces        Cream Cheese
   6                    Eggs, Separated
   1 1/4  Cups          Gruyere Cheese, Finely Grated
   1      Pinch         Cayenne
     1/4  Teaspoon      Nutmeg, Freshly Grated
                        Salt and Pepper to Taste

1)  Preheat oven to 220° C (425° F).

2)  Combine the cream cheese, egg yolks, cheese, cayenne, nutmeg, and salt and pepper to taste in a mixing bowl.  Beat with a wire whisk until smooth.

3)  Beat the egg whites until quite stiff and fold them into the cheese mixture.

4)  Generously butter the bottom and sides of a 6-cup souffle dish.

5)  Spoon the mixture into the prepared dish.

6)  Put the dish on a baking sheet and place in the oven.  Bake 10 minutes, then reduce the oven heat to 200° C (400° F) and bake for 15 minutes longer.

7)  Serve immediately.
