                              Cherry Pie II

                        *** 9-inch Pie Crust ***
     2/3  Cup           Butter
   2      Cups          Flour
   1      Teaspoon      Salt
   5      Tablespoons   Cold Water
                        *** Filling ***
   1 1/3  Cups          Sugar
     1/3  Cup           Flour
   4      Cups          Pitted Sour Cherries
     1/4  Teaspoon      Almond Extract
   2      Tablespoons   Butter

Make pie crust:

1)  Mix the flour with the salt and cut the butter into the flour with a pastry cutter until the mixture resembles fine meal.

2)  Add the water until the mixture can be gathered into a ball.

Make the filling:

3)  Mix the sugar and flour together and stir in the cherries and the almond extract.

Assemble:

4)  Divide the pie dough in half and roll out one half for the bottom crust.

5)  Place the round into a 9-inch pie plate and prick all over the bottom with a fork.

6)  Pour the cherries into the crust and dot with the 2 tablespoons of butter.

7)  Roll out the remaining half of dough, place over the top of the pie and seal.

8)  Brush the crust with milk and cut holes in the top to allow steam to escape during baking.

9)  Bake at 220° C (425° F) until crust is brown and juice begins to bubble through the slits in the crust (35 to 45 minutes).
