                               Cherry Pie I

  10      inch          Graham Cracker Crust
 200      Grams         Cream Cheese -- (7 ounces)
     1/2  Cup           Sugar
   1      Teaspoon      Vanilla Extract
   1      Cup           Whipping Cream
 700      Grams         Sour Cherries,Pitted,Jar (Weichseln) -- drained (save juice)
     1/4  Cup           Sugar
   1 1/2  Tablespoons   Cornstarch
     3/4  Cup           Juice from the jar of cherries
     1/4  Teaspoon      Almond Extract

1)  Make the graham cracker crust and cool it.

2)  Mix 1/4 cup sugar and the cornstarch in a saucepan large enough to hold the cherries.  Gradually add enough of the 3/4 cup of cherry juice to dissolve the sugar and cornstarch and stir well until there are no lumps, then add the rest of the juice.

3)  Cook juice over moderate heat until it thickens.  Add the drained cherries and cook a few minutes more. Remove from heat and stir in almond extract.  Cool completely before using as a topping.

4)  Beat together the cream cheese, sugar and vanilla.

5)  Whip the cream and fold it into the cream cheese mixture.

6)  Spread the mixture in the cooled crust.  Top with cherry filling and chill well.  Garnish with whipped cream if desired.

NOTES : The steps for making the cherry topping can be eliminated if you can buy cherry pie filling (1 can is enough).
