                           Broad Beans in Lemon

   2      Cups          Broad Beans, Dried -- or Fava Beans
   2      Cloves        Garlic,Crushed
   1      Teaspoon      Salt
     1/2  Cup           Lemon Juice
     1/4  Cup           Olive Oil
     1/2  Cup           Parsley,Finely Chopped
                        Green Onions,Chopped
                        Lemon Wedges

1)  Soak the beans overnight in water to cover.

2)  Drain beans and place them in a saucepan.  Cover with water.  Cover pan with a lid and simmer until the beans are tender (about 1 hour).  Beans should be covered with water during cooking.  If too much water evaporates during the cooking, add 1/2 to 1 cup more to prevent sticking.

3)  Combine garlic, salt and lemon juice in a serving bowl.  Mix well.

4)  Mash the beans and some of the liquid.  Mix thoroughly and add garlic mixture.  Sprinkle oil over the top of the beans.  Garnish with chopped parsley, green onions and lemon wedges.

5)  Serve hot or cold at breakfast or lunch with Pita bread.
