                               Beef Brisket

   4      Pounds        Beef Brisket
   2      Medium        Onions, Sliced
   4      Stalks        Celery, Sliced Diagonally
     1/2  Teaspoon      Allspice,Ground
   2                    Bay Leaves
                        Salt (generous amount)
                        Pepper (to taste)

1)  Lightly score the fatty side of the meat and rub the meat all over with allspice, salt and pepper.

2)  Place the meat in a shallow baking pan on top of enough foil to wrap around it.  Layer all of the onions on top, then all of the celery and tuck in the bay leaves.

3)  Wrap heavily and tightly with foil to prevent the meat from curling during baking.

4)  Bake at 180° C (350° F) for 3 hours or more.

Serving Ideas : Serve with wide noodles.

NOTES : Two cups of broth are produced during the cooking.  The broth can be made into gravy.
