                             Braised Cabbage

 600      Grams         Cabbage -- (21 ounces)
  25      Grams         Lard or Oil -- (2 Tablespoons)
                        Salt and Pepper to taste
 125      Milliliters   White Wine (fruity) -- (1/2 cup)
 100      Grams         Creme Fraiche (or Cream Cheese) -- (3 1/2 ounces)

1)  Bring some salted water to the boil in a large saucepan.

2)  Trim the cabbage discarding the outer leaves, stalk and the ribs of the larger leaves, then shred it and wash it.

3)  Turn off the heat under the water and leave the cabbage to soak in the hot water for about 5 minutes.

4)  Plunge the cabbage into ice cold water and drain it in a colander.

5)  Melt the fat in a large pan over high heat, then stir fry the cabbage until golden brown (about 5 minutes).

6)  Season the cabbage with salt and pepper.

7)  Add the wine and the cream cheese, cover and simmer over low heat for about 20 minutes, or until the cabbage is tender.

8)  Adjust the seasoning, if necessary, and serve at once.
