                     Baigan Bhurta (Spiced Aubergine)

 450      Grams         Aubergines -- (1 pound)
   3      Tablespoons   Oil or Ghee
   1      Large         Onion, Peeled and Finely Chopped
   4      Cloves        Garlic
     1/2  Teaspoon      Chilli, Ground
     1/2  Teaspoon      Ground Turmeric
   4      Sprigs        Coriander Leaves,Chopped
   1                    Green Chilli,Seeded and Finely Chopped
     1/2  Teaspoon      Salt
   5                    Tomatoes,Skinned and Chopped
   1      Tablespoon    Ginger,Fresh,Minced

1)  Spike the aubergines with a fork or skewer and place them under a preheated grill for about 15 minutes, turning frequently until the flesh feels soft.  Allow to cool.  Scrape off the burnt skin with a knife.  Chop the flesh.

2)  Heat the oil in a pan and gently fry the onion until just tender.  Add the chopped ginger and garlic and fry for 1-2 minutes.

3)  Add the aubergine cubes and stir in the chilli powder, turmeric, coriander leaves, chopped chilli, salt and the tomatoes.  Fry for 10-15 minutes until dry.

4)  Serve with buttered chappatis.
