                               Almond Roca

 225      Grams         Brown Sugar (soft) -- (8 ounces)
 225      Grams         Butter -- (8 ounces)
 125      Grams         Semisweet Chocolate -- (4 squares)
                        Almond Slices

1) Line a baking dish with waxed paper.  Crumble some sliced almonds evenly over the paper.  Melt half of the chocolate and pour a thin layer over the almonds.  Let the chocolate cool and harden.

2)  Cook the butter and brown sugar gently over low heat, stirring constantly and scraping sides of pan frequently, until mixture makes a finely spun thread (180° F).

3)  Pour sugar mixture over the cooled chocolate and let it harden.

4)  Melt the other half of the chocolate for the top layer.

5)  Sprinkle sliced almonds over cooling chocolate.

6)  When roca is hard, break it into pieces.
